BEAUTY OF GHEE :
1) Ghee can tolerate heat, as on heating it become more pure (highest smoke point) while oils especially vegetable seed oil containing more unsaturated fatty acids (MUFA AND PUFA) oxidizes at high temperature and releases free radicals and damages our body tissues.
2) Ghee puts flavour to our food and stimulate satiety signals early. Addition of ghee to food prevent us from overeating.
3) Ghee contain unique short chain fatty acids (SCFA) which breaks very fast in our body. Short chain fatty acids present in ghee and milk and medium chain fatty acids present in coconut does not require lymphatic channel for transportation and metabolized in liver directly to produce energy.
4) Ghee increases our gastric fire to digest food better.
5) Ghee helps in providing our gut good bacteria. Short chain fatty acids (SCFA) present in ghee is now recognised as Pre-biotic. Ghee helps in better digestion and absorption of food. Ghee thus relieves symptoms like blotting and constipation. Butyric acid is main short chain fatty acid present in ghee. Butyric acid is good for gut health, have beneficial effect in irritable bowel syndrome, inflammatory bowel diseases (ulcerative colitis and crohn's disease) and also in diabetes.
6) Property of adding good gut bacteria makes Ghee great anti allergen. People develop food allergies just because of lack of gut bacterial floras.
7) Ghee gives us good supply of vitamins A, D, E and K and B12. Vitamin A and E are great antioxidant vitamins. So ghee work as antioxidant in our body and prevent our body tissues from damage and skin from aging. Ghee keeps our hair glowing and gives us wrinkle free skin and lubricates our joints.
8) "Wulzen factor" present in white butter (makkhan from raw milk) is very effective in preventing and treating joint problems, Arthritis and scleroderma. Wulzen factor is also known as anti stiffness factor and anti arthritic nutrient. As heating destroys it, we may get it from unpasteurized milk only.
9) SCFA present in ghee can cross blood brain barrier and nourishes brain tissues. Brain becomes more active and thinking becomes smarter.
10) Ghee from grass fed cattle have CLA (conjugated linolic acid) known for its stubborn fat burning property. We need good fat to burn fat. CLA is also proved to be effective in insulin resistance, diabetes, inflammation and many cancers.
11) Ghee (best oily medium) decreases glycemic index of food (GI) means presence of fat in food leads to slow release of sugar in blood and better use of food to produce energy, Very good for us specially diabetics. Slow release of glucose in blood maintains energy level throughout the day. This is the reason of putting ghee on the top of khichdi and dal-rice and other food items. All stuffs prepared from fibre - less maida should be deep fried in ghee for better digestibility.
12) Ghee in food decreases our desire for sweets post lunch.
13) In 2015 US FDA admitted that there is no link between cholesterol and heart diseases and there is no reason to stop eating cholesterol rich food. But the myths about some nutritious food items like peanut, coconut, cashew nut and ghee are so deep rooted that it is very difficult to teach people to eat them.
14) In 2014 UK health guidelines (NICE) officially removed Omega 3 (PUFA) as a heart healthy nutrient because Omega 3 in excess itself oxidizes our body tissues.
15) All fat gives 9 calorie per gm. Weather we eat ghee or oils, they add same calories to our food.
16) Food Industry defamed not only ghee but also our traditional Kachi Ghani oils to sell there nonsense so called heart healthy oils like safola oil, Fortune refined oil, and extra virgin olive oil.
17) Everyone weather healthy or obese or diabetic or hypertensive ( high BP) suffering from any heart disease.
